Thai Coconut Rice (Mini Rice Cooker)
Creamy Thai Coconut Rice made with jasmine rice and coconut cream, topped with cashews, green onions, or sesame seeds.
Ingredients
- ¼ tsp coconut oil
- ¾ cup jasmine rice
- ½ cup coconut cream
- 1 cup water
- ¼ tsp sea salt
Optional Toppings
- Green onions, slices thin
- Roasted cashews, chopped
- Sesame seeds
Instructions
- Lightly coat the inside of the rice cooker pot with coconut oil. Add jasmine rice, coconut cream, and water.
- Cover and cook 20-25 minutes, or until one full cooking cycle is complete.
- Once done, fluffy the rice gently with a fork inside the pot.
- Transfer to a serving bowl, season with sea salt and black pepper to taste, and add any desired toppings.
- Serve warm and enjoy this sweet and savory side dish!
