Bacon & Egg Bagel Sandwich
This Bacon & Egg Bagel Sandwich is the perfect grab-and-go breakfast. Crispy bacon, fluffy eggs, creamy avocado, and a touch of spicy mayonnaise come together on a toasted bagel or croissant for a hearty and satisfying start to the day.
Ingredients
- 4 eggs
- 7-10 Slices of bacon or sausage patties
- 4 bagels or croissants, sliced in half lengthwise
- 2-4 tbsp spicy mayonnaise
- 1 avocado, sliced
- Salt and freshly ground black pepper, to taste
Instructions
- On the Stovetop in a medium skillet, cook bacon slices or sausage patties until brown and crispy, about 5-7 minutes. Remove and set aside.
- In a bowl, crack the eggs, beat them lightly, and season with salt and black. Pour into a lightly greased nonstick pan and cook over medium heat until set, either as an omelette or scrambled, depending on your preference.
- Transfer the cooked eggs to a cutting board and cut into four portions if making an omelette.
- Lightly toast bagels or croissants. Spread each bottom half with a layer of spicy mayonnaise.
- Top with the cooked eggs, bacon or sausage, and avocado slices. Cover with the remaining bagel or croissant halves.
- Serve warm and enjoy your homemade bagel breakfast sandwich.
