Ingredients
  

  • ½ cup popcorn kernels (for the popcorn maker)
  • 1 cup granulated sugar
  • ½ cup insulated butter
  • ¼ cup corn syrup or honey
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ½ cup chocolate chips or melted chocolate
  • A pinch of salt

Instructions
 

  • Popcorn kernels in your popcorn maker according to the machine's instructions. Transfer the fresh popcorn to a large bowl and remove any unpopped kernels.

Make the Caramel

  • In a saucepan, mix butter, sugar, corn syrup, and salt. Cook on medium heat until it starts bubbling. Let it simmer for 3 to 4 minutes without stirring.
  • Remove the pan from heat and quickly stir in baking soda and vanilla. The Caramel will foam up slightly.

Coat the Popcorn

  • Pour the caramel over the popped popcorn and toss until everything is evenly coated.
  • Spread the caramel popcorn on a baking tray lined with parchment paper.
  • Bake at 250°F (120°C) for 25–30 minutes, stirring every 10 minutes to keep it crisp.
  • Melt the chocolate in the microwave or over a double boiler.
  • Drizzle the melted chocolate over the baked caramel popcorn.
  • Let it cool completely, then break it into pieces and store in an airtight container.
