Dark Chocolate Mini Waffles
These dark chocolate mini waffles are rich, lightly crisp on the outside, and soft in the center. They are made to fit perfectly in a mini waffle maker, so you get even cooking and great texture every time. This recipe works well for breakfast, brunch, or a quick dessert.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons unsweetened dark cocoa powder
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg
- ¾ cup milk
- 2 tablespoons melted butter or vegetable oil
- ½ teaspoon vanilla extract
- ¼ cup dark chocolate chips or chunks
Instructions
- Preheat your mini waffle maker according to the manufacturer’s instructions. Lightly grease if needed.
- In a medium bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
- In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently. Do not overmix. The batter should be smooth with a few small lumps.
- Fold in the dark chocolate chips.
- Spoon about 2 to 3 tablespoons of batter into the center of the mini waffle maker. Close the lid and cook for 2 to 3 minutes, or until the waffle is set and slightly crisp.
- Carefully remove and repeat with the remaining batter.
