Grilled Lemon & Garlic Chicken

Ingredients
- 2 large chicken breasts
- 2 lemons (one for marinade, one for garnish)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- 2 tbsp fresh parsley, chopped (plus more for garnish)
- salt and black pepper, to taste
Instructions
- Prepare the marinade in a large mixing bowl. Zest and juice one lemon into the bowl, then add olive oil, garlic, Italian seasoning, red pepper flakes, and parsley. Whisk to combine and set aside.
- Slice each chicken breast in half horizontally to make 4 thin cutlets.
- Season both sides with salt and black pepper. Add chicken to the marinade and turn to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Heat a grill pan over medium-high heat and brush lightly with oil.
- Add chicken and cook for 4-6 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
- Remove chicken from the pan and tent with foil. Let rest for 5 minutes.
- Slice the second lemon and use for garnish along with extra parsley.
Serving Idea
- Great with roasted potatoes, grilled vegetables, or over a fresh green salad.
