Herb Roasted Chicken & Potatoes
Herb Roasted Chicken and Potatoes is a simple one-pan meal with tender chicken, golden potatoes, and aromatic herbs for an easy, comforting dinner.
Ingredients
- 1 whole chicken or 4-6 chicken pieces (legs or thighs)
- 4 medium potatoes, cut into chunks
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 4 garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- salt and black pepper to taste
- fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C)
- Place the chicken pieces in a baking dish. Add the potato chunks around them.
- In a small bowl, mix olive oil, lemon juice, garlic, rosemary, thyme, oregano, paprika, salt, and pepper.
- Pour this mixture over the chicken and potatoes. Use your hands or a spoon to coat everything evenly.
- Bake for 45–55 minutes, or until the chicken is golden and cooked through, and the potatoes are tender. Turn the potatoes halfway for even browning.
- Let it rest for 5 minutes, then sprinkle with fresh parsley before serving.
