Ingredients
  

  • 1 whole chicken or 4-6 chicken pieces (legs or thighs)
  • 4 medium potatoes, cut into chunks
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt and black pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C)
  • Place the chicken pieces in a baking dish. Add the potato chunks around them.
  • In a small bowl, mix olive oil, lemon juice, garlic, rosemary, thyme, oregano, paprika, salt, and pepper.
  • Pour this mixture over the chicken and potatoes. Use your hands or a spoon to coat everything evenly.
  • Bake for 45–55 minutes, or until the chicken is golden and cooked through, and the potatoes are tender. Turn the potatoes halfway for even browning.
  • Let it rest for 5 minutes, then sprinkle with fresh parsley before serving.
