Homemade Biscuit Pizza Pockets
These biscuit pizza pockets are made with homemade dough, filled with cheese and pepperoni, and cooked in a Mini Waffle Maker until golden. They’re quick, warm, and perfect for dipping in marinara.
Ingredients
- 2 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup milk
- ½ cup cold butter, cut into small chunks
- Pepperoni and shredded mozzarella cheese
Instructions
- In a bowl, mix the flour, baking powder, and salt. Add the cold butter and cut it into the dry ingredients using a fork or pastry cutter until the mixture looks crumbly.
- Pour in the milk and bring the dough together. Mix until it forms a soft, workable dough.
- Dust your counter with a little flour and roll the dough to about ½ inch thickness. Cut out 3-inch circles using a biscuit or cookie cutter.
- Carefully slice each circle horizontally to create a pocket. Fill each one with pepperoni and shredded mozzarella. Press the edges firmly to seal so the filling doesn’t leak during cooking.
- Preheat your Mini Waffle Maker and lightly coat it with oil. Place a filled biscuit pocket inside, close the lid, and cook for 3 to 4 minutes until the pocket turns golden and crisp. Repeat with the remaining dough.
- Serve warm with marinara sauce for dipping and enjoy a simple, cheesy pizza bite.
