Summer Berry Crisp
A simple, comforting dessert made with juicy summer berries and a buttery oat topping. It is easy to prepare, lightly sweet, and perfect for warm-weather gatherings.
Ingredients
For the Berry Filling
- 4 cups mixed summer berries (strawberries, blueberries, raspberries, or blackberries)
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
For the Crisp Topping
- 1 cup old-fashioned rolled oats
- ½ cup all-purpose flour
- ½ cup brown sugar, packed
- ½ tsp cinnamon
- ½ cup cold unsalted butter, cubed
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish.
- In a large bowl, combine the berries, sugar, lemon juice, cornstarch, and vanilla. Gently toss until the berries are evenly coated. Spread the mixture into the prepared baking dish.
- In another bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and use your fingers or a pastry cutter to work the butter into the mixture until it forms coarse crumbs.
- Sprinkle the crisp topping evenly over the berry layer.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the berry filling is bubbling around the edges.
- Remove from the oven and let it cool for 10 minutes before serving.
Serving Tips
- Serve warm with vanilla ice cream or whipped cream for a classic summer dessert. It also tastes great on its own for a lighter treat.
Storage
- Cover and store leftovers in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
