Ingredients
  

For the Berry Filling

  • 4 cups mixed summer berries (strawberries, blueberries, raspberries, or blackberries)
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

For the Crisp Topping

  • 1 cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ tsp cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish.
  • In a large bowl, combine the berries, sugar, lemon juice, cornstarch, and vanilla. Gently toss until the berries are evenly coated. Spread the mixture into the prepared baking dish.
  • In another bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and use your fingers or a pastry cutter to work the butter into the mixture until it forms coarse crumbs.
  • Sprinkle the crisp topping evenly over the berry layer.
  • Bake for 35 to 40 minutes, or until the topping is golden brown and the berry filling is bubbling around the edges.
  • Remove from the oven and let it cool for 10 minutes before serving.

Serving Tips

  • Serve warm with vanilla ice cream or whipped cream for a classic summer dessert. It also tastes great on its own for a lighter treat.

Storage

  • Cover and store leftovers in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
