Thai Coconut Rice (Mini Rice Cooker)

Creamy Thai Coconut Rice made with jasmine rice and coconut cream, topped with cashews, green onions, or sesame seeds.

Ingredients
  

  • ¼ tsp coconut oil
  • ¾ cup jasmine rice
  • ½ cup coconut cream
  • 1 cup water
  • ¼ tsp sea salt

Optional Toppings

  • Green onions, slices thin
  • Roasted cashews, chopped
  • Sesame seeds

Instructions
 

  • Lightly coat the inside of the rice cooker pot with coconut oil. Add jasmine rice, coconut cream, and water.
  • Cover and cook 20-25 minutes, or until one full cooking cycle is complete.
  • Once done, fluffy the rice gently with a fork inside the pot.
  • Transfer to a serving bowl, season with sea salt and black pepper to taste, and add any desired toppings.
  • Serve warm and enjoy this sweet and savory side dish!
