Waffle Club Sammies are mini waffle sandwich filled with chicken or turkey, crispy bacon, egg, cheese, and fresh veggies. They're easy to assemble and work perfectly with a mini waffle maker. Great for quick lunches, brunch or fun snacks.

Ingredients
  

  • 1 cup waffle batter ( enough for 4 mini waffles)
  • 4-6 slices cooked chicken or turkey
  • 2 strips crispy beef or turkey bacon
  • 1 small egg, cooked (fried or scrambled)
  • 1 slice cheese, cut into halves
  • Lettuce leaves
  • Tomato Slice
  • 1-2 teaspoons mayonnaise or any spread
  • pinch of salt and pepper

Instructions
 

  • Preheat your mini waffle maker.
  • Pour a small amount of batter inside and cook 4 mini waffles. Set aside to cool slightly.
  • Spread mayo on the bottoms of 2 waffles.
  • Add lettuce and tomato first so the waffle doesn't get soggy.
  • Layer chicken or turkey slices, then add cheese.
  • Place the cooked egg and crispy bacon on top.
  • Sprinkle salt and pepper.
  • Close each sandwich with the remaining waffles.
  • Press lightly so everything holds together and serve warm.

Tip

  • If you want the cheese to melt more, place the full sandwich back in the mini waffle maker for 10-15 seconds only.
